Ingredients for 4 burgers
- 4 soft burger buns
- 500 g of cod in slices
- 8 Borettana Onions of Emilia
- 1 slice of stale bread
- 1 egg
- 1 teaspoon of chopped parsley
- breadcrumbs
- salt and pepper
- mayonnaise, tomatoes and lettuce for garnishing
How to prepare
Burgers with cod and Borettana Onions are a tasty second course that will delight the whole family! The flavour of fish goes perfectly with the sweet taste of Borettana Onions of Emilia, and as they are baked, the result is fancy yet light. Here’s how to prepare them.
Blanch the cod for a few minutes in slightly salted boiling water, then drain and chop coarsely using a blender. Dip the bread for a few seconds in lukewarm water, squeeze and add to the chopped cod. Add the egg, chopped parsley, salt and pepper. Blend all the ingredients, adding breadcrumbs if necessary.
Shape the mixture into burgers with your hands, dip in the breadcrumbs and bake at 180°C for 20-25 minutes until golden brown. Once cooked, cut the buns in half and heat. Spread some mayonnaise onto each half, garnish with lettuce leaves and tomatoes, then place a cod burger on each and top with plenty of Borettana Onion, cut into slices. Serve immediately while still hot.
